...are among the most magical and mystical teas in the world. Puerh is unique among its peers because of its history, processing, effects, aroma as well as taste. Unlike most other teas which are only oxidized, puerh is also fermented. The method of fermentation divides puerhs into two categories – sheng (green, raw) and shou/shu (dark, ripe). The first of these two is the original style which is postfermented in its natural surroundings over the course of many years, while the latter is a sped up via controlled composting/piling.
