Shui Xian or "Water Fairy" as it is often translated is one of the more well-known varieties of Wuyi Cliff oolong (the most famous being obviously Da Hong Pao). The tea is more heavily oxidized, darker and full-bodied, it tastes sweet, sharp, brisk and toasty and brings to mind honey and wild strawberries, in addition to the lovely mineral aftertaste that good Wuyi Cliff teas are famous for.
Our Shui Xian is considered to be of second grade (grade 1 to 4 with 1st being the highest) which is called Ban Yan, meaning the leaves were harvested from tea trees that are growing on the cliffsides immediately bordering Wuyi National Park.
Brewing tips: 3 grams per 200ml of 95C water, 1st steeping 1min, 2nd steeping 1-2min, 3rd steeping 2-3min etc.
